Cucumber Tomato Salad
  • 2 cups sliced cucumbers
  • 1 cup cherry tomatoes, cut in half
  • ½ red onion sliced thin
  • ¾ cup apple cider vinegar
  • ½ cup white sugar
  • ½ teaspoon pepper flakes
  • ½ teaspoon salt
  1. Add vinegar, pepper flakes, and sugar to a small sauce pan. Bring vinegar to a boil and stir sugar until dissolved (3 minutes). Remove from heat and let cool completely.
  2. Combine tomatoes, onion, and cucumbers in a bowl. Sprinkle with salt and let sit at room temperature for an hour.
  3. Once the vinegar is cooled, combine with vegetables and let sit in the refrigerator for at least 2 hours before serving.
