Cheesy Skillet Macaroni Casserole

This is a Pantry Challenge recipe.  It’s kid friendly and can be made with ingredients from most pantries.



1/2 ib lean ground beef or ground turkey
1 (1.25 oz) package low sodium taco seasoning mix
2 cups water
1 1/2 cups uncooked elbow macaroni
1 15 oz whoc kernel corn, drained
1 15 oz can black beans
1 15 oz can mexican style diced tomatoes with cilantro and chili’s
1/2 cup sharp cheddar cheese


1. Brown meeting over medium heat until completely cooked. Drain if necessary.
2. Add taco seasoning, water, macaroni, corn, beans, and tomatoes. Mix well and bring to a boil.
3. Cover and cook for 8 to 10 minutes. Stir occasionally.
4. Sprinkle with cheddar cheese. Recover and let sit for 2 to 3 minutes or until cheese melts.
