5 things I learned this week about broiling steaks

5 things I learned this week about broiling steaks.

Lesson 1. Animal fat will combust when cooked too close to the broiler.

Lesson 2.  Thick black acrid smoke pouring from the oven can ruin a romantic meal.

Lesson 3.  All kitchens should have at least 1 fire extinguisher

Lesson 4.  Oxygen feeds flames – remember the movie Backdraft?

Lesson 5.  Common sense should trump recipe instructions every time.

Enough said.
