The Best Ever Chocolate Chip Cookie Bars

I really wish I could take credit for this recipe but unfortunately I can’t. This is a Cook’s Illustrated recipe that’s really amazing. I’ve tried for years to duplicate the soft and chewy bar cookies that I buy at The Cookie Store but all the recipes I’ve tried fell short until now.  Melting the butter and adding whole cup of brown sugar adds enough moisture to keep these bars moist and chewy. This recipe would be just as good with white chocolate chips, raisins, cranberries, peanut butter chips, or M&Ms.

The Best Ever Chocolate Chip Cookie Bars


2 1/8 (10.5 oz) cups all purpose flour
1/2 teaspoon salt

1/2 teaspoon baking soda

12 tbls unsalted butter – melted and cooled

1 cup (7 oz)  light brown sugar

1/2 cup  (3 1/2 oz) white sugar

1 large egg

1 large egg yolk

2 teaspoons vanilla extract

2 cups bittersweet chocolate chips


1. Heat oven to 325 degrees. Spray 13 x 9 baking pan with nonstick spray.

2. Mix flour, salt, and baking soda in medium bowl.

3. Whisk melted butter and sugar in large bow. Add egg, egg yolk, and vanilla and mix well.

4. Fold in flour mixture until just combined.

5. Fold in chocolate chips and spread batter into prepared pan.

6. Bake until top is light golden brown and slightly firm to the touch. Edges should start to pull away from sides of pan. 27 to 30 mins.
