Oatmeal Chocolate Chip Cookies
- 1½ cup quick cooking oats
- ¾ cup white flour
- ½ tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter (1 stick)
- ½ light brown sugar
- 7 tbsp. white sugar
- 1 large egg, well beaten
- 1 tsp pure vanilla extract
- ¼ cup chocolate chips
- Preheat oven to 350 degrees.
- Mix oats, flour, baking soda, and salt in a medium bowl.
- In a large bowl mix sugars, butter until creamy and fluffy. Add egg and vanilla and mix just until combined.
- Stir in oat mixture. Add chocolate chips.
- Spoon onto ungreased cookie sheet or parchment paper in rounded tablespoons. Bake for 12 minutes.
