Oatmeal Chocolate Chip Cookies

Ingredients
  • 1½ cup quick cooking oats
  • ¾ cup white flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter (1 stick)
  • ½ light brown sugar
  • 7 tbsp. white sugar
  • 1 large egg, well beaten
  • 1 tsp pure vanilla extract
  • ¼ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix oats, flour, baking soda, and salt in a medium bowl.
  3. In a large bowl mix sugars, butter until creamy and fluffy. Add egg and vanilla and mix just until combined.
  4. Stir in oat mixture. Add chocolate chips.
  5. Spoon onto ungreased cookie sheet or parchment paper in rounded tablespoons. Bake for 12 minutes.
